The whole of the United Kingdom, and the Commonwealth, has been gripped by the Diamond Jubilee celebrations these last few days.
We really have enjoyed a much needed revival of community spirit and togetherness whilst showing our collective appreciation of our Queen and our Monarchy.
It truly has been a historic weekend, and one that perhaps our children will not quite be able to fully appreciate until they are a little older. This does not stop them from being in awe of it all however.
If your children are anything like my daughter they will have been totally overwhelmed by the royal procession and the Queen's balcony appearance, cementing her desire to have a princess themed birthday party. But times are hard and I am sure that many of us are without question lacking the same budget seen for the Jubilee celebrations. Not wanting to disappoint I’d say that’s “challenge accepted”!

It was great to see so many people come together for the Ashton-on-Mersey Village Jubilee Party on Saturday 2 June 2012.
So I thought I would share some of the photo's (taken by Patrick Dempsey) from the day...

...and not forgetting a very tired looking me at the end of the day!
So I would like to say a big thank you to those that organised the party - The Ashton Village Saver and The Olive Connection - and of course all the lovely families (and traders) that came and made it such a success!!

The Victoria Sponge also known as a Victoria Sandwich and less commonly a Victoria Cake but none the less a classic...and what I would consider to be a must have at any Jubilee party.
About a week ago I was in the middle of a Jubilee inspired photo shoot when it got me to thinking what the actual history was behind the Victoria Sponge. Many of you can probably guess that it was named after Queen Victoria, who reigned for a staggering 63 years!
It is said that Queen Victoria would request small cakes to relieve the rumbling tummies of her courtiers between lunch and dinner time. It was her lifelong friend and lady-in-waiting, the Duchess of Bedfordshire that was the creator of the British meal “Afternoon Tea” which involved serving small sweet cakes accompanied by tea (usually Darjeeling) and sandwiches. The cake at the centre of tea-time evolved over generations into the Victoria Sponge we know, and love, today.
However, you may be surprised to learn that the official Women's Institute guidelines dictate that a real Victoria Sponge has only a jam filling and absolutely no cream!
